Let me tell you something about croquettes 

Croquettes are a popular and versatile dish enjoyed in many cuisines around the world. They are typically made by combining a mixture of cooked ingredients such as meat, fish, chicken, vegetables, or cheese with mashed potatoes, bread crumbs, and various seasonings. The mixture is shaped into small cylindrical or spherical shapes, breaded, and then deep-fried until crispy and golden brown.

The origins of croquettes can be traced back to France, where they were first mentioned in cookbooks in the 19th century. The word "croquette" is derived from the French word "croquer," which means "to crunch." Croquettes were originally a way to use up leftover meat or fish by combining them with other ingredients to create a new dish.

Royal Origins: Croquettes have a royal connection. It is believed that croquettes were first created in the French royal court during the reign of Louis XIV in the 17th century. They were initially served as a luxurious dish for the nobility.


Croquettes gained popularity throughout Europe and eventually spread to other parts of the world through colonization and cultural exchange. Different countries have their own variations of croquettes, each with its unique flavors and ingredients. For example:

  1. Spanish Croquettes: Known as "croquetas" in Spanish cuisine, these croquettes are often filled with a béchamel sauce mixed with ingredients like ham, chicken, or cod.

  2. Dutch Croquettes: In the Netherlands, croquettes are called "kroketten" and are usually made with a filling of ragout, a thick stew made from meat or vegetables.

  3. Japanese Korokke: Inspired by the European croquettes, the Japanese developed their own version called "korokke." These croquettes often contain mashed potatoes, ground meat, and vegetables, and are coated with panko breadcrumbs before frying.

  4. Indian Cutlets: In Indian cuisine, croquettes are commonly referred to as "cutlets." They are made with a mixture of mashed potatoes, vegetables, spices, and sometimes meat. Cutlets are often enjoyed as a snack or appetizer.

Super delicious Chicken Potato Croquettes recipe!


Ingredients:

Oil 2 tbsp

Onion chopped 1 medium 

Chicken boiled & shredded 350g 

Lal mirch (Red chili) crushed ½ tbs 

Lehsan powder (Garlic powder) 

1 tsp Oregano 

1 tsp Maida (All-purpose flour) 2 tbs 

Milk ½ Cup 

Eggs 2 

Potatoes boiled ½ kg 

Egg yolks 2 

Butter 2 tbs (room temperature)  

Black pepper crushed ½ tbs 

Salt ½ tbs or to taste 

Fresh coriander chopped 2 tbs 

Cheddar cheese grated ½ cup 

Mozzarella cheese grated ½ cup 

Maida (All-purpose flour) sifted 1 Cup or as required 

Bread crumbs 1 Cup or as required 

oil for frying


Directions:

In a wok,add oil,onion & fry until light golden.

Add boiled & shredded chicken & mix well.

Add red chilli crushed,garlic powder,italian seasoning & mix well.

Add all-purpose flour,mix well & cook for 2 minutes.


Add milk,mix well & cook until dries up (2-3 minutes) & let it cool down.


Remove egg yolks from eggs & set aside for later use.

In a bowl,add boiled potatoes & mash well with the help of masher.

Add reserved egg yolks,butter,black pepper crushed,salt,fresh coriander & mix well.

Now add cooked chicken mixture,cheddar cheese,mozzarella cheese and mix until well combined.

Grease hands with oil,take a mixture (45g) and make croquettes of equal sizes (Makes 25) & freeze for 1 hour.

In a bowl,add reserved egg white and whisk well.

Now coat croquettes in all-purpose flour then dip into beaten egg whites and coat in breadcrumbs.

In a wok,add oil,heat it and fry croquettes on medium low flame until golden brown.

Can be stored in freezer for up to 1 month.
