Ingredients
4 boiled eggs
2 medium onions (chopped)
1 tsp Kashmiri Chilli Powder
1 tsp red Chilli Powder
1 tsp Turmeric
1 tsp Coriander Powder
1 tsp Cumin Powder
2 Bay leaves
1 tsp Kasturi Methi
Desiccated Coconut
1 tbsp fresh cream
Oil 3 tsp
1 tsp Salt
1 tsp chopped Coriander Leaves for garnish
Tomato Cashew Paste Ingredients
2 medium Tomatoes (halved)
12 Cashew Nuts
1 Inch piece Ginger
4 Garlic
3 Green Cardamom
3 Cloves
Preparation
Boil Eggs . Shell the eggs and cut into halves
To make tomato cashew paste mix all its ingredients and and grind it till smooth in a blender.
Finely chop the onions
Method
Take a kadhai and heat oil
Add the bay leaves and Immediately add onions Fry on medium to high till light brown
Now add the blended Tomato and Cashew paste and fry on high for 2 minutes.
Add Turmeric Red Chilli Powder Coriander and Cumin Powder. Mix and Add a cup of Water. Fry on medium for 5 minutes.
Add Kashmiri Powder and Salt and fry until medium for another 5 minutes till the Masala is cooked and oil separates.
Add desiccated coconut and mix well. Mix in the cream and little water to form gravy. Cook for few Minutes until oil separates.
Add Kasuri Methi mix and cook for 2 minutes
Now add in the halved boil eggs and give a stir gently to cover the eggs with gravy.
Cover and cook for around 5 minutes.
Garnish with Chopped Coriander Leaves.
Simmer for 2 minutes and then Serve Hot.
