Malai Chicken Tikka

Ingredients

600 grams boneless chicken

1 tbsp ginger garlic green chilli paste

1 tsp salt

1 tsp pepper powder

1 tsp chaat masala powder

1/2 cup plain curd

1 tbsp lemon juice

Cashew paste

5 tbsp butter

1 tbsp oil

1 cup fresh cream

Chat masala and pepper as required

1/3 cup milk

Method:

Marinate the chicken with salt, black pepper, chat masala, ginger garlic green chilli paste, curd, lemon juice, half cashew paste and keep the other half for later use and keep the chicken for marination for at least 15-20 minutes.

In a pan, heat 1 tbsp oil, 1 tbsp butter, add the marinated chicken and fry for 2-3 minutes. Don’t add water as the chicken and curd will leave its water. Cover the lid and let it cook on low flame for 12-15 minutes. Dry the excess water on high flame keeping in mind that the remaining gravy does not get dry. Take out the chicken pieces. Keep the remaining gravy for later use.

Grill the Chicken pieces.

For Gravy : In the Same pan, along with the remaining gravy, add 1-2 tbsp butter, remaining cashew paste, dash of water and mix well and cook for 1 minute. Add 1 cup fresh cream, 1/2 tsp pepper powder, 1/2 tsp chaat masala, mix well until well cooked. Add 1/3 milk/water or as required. Mix well until well cooked. Your malai gravy is ready. Add grilled chicken pieces to the gravy. Add 1-2 tbsp melted butter on top of it.
