Chicken Cheese Seekh
Ingredients:
- 500 grams ground chicken
- 1 cup grated cheese (cheddar or mozzarella)
- 2 tablespoons chopped coriander leaves
- 1 tablespoon ginger-garlic green chilli paste
- 1 teaspoon black pepper powder
- 1 teaspoon chaat masala powder
- 1 egg
- 2 bread slices
- Salt to taste
- 1 teaspoon lemon juice
- 2 tablespoons oil for shallow frying
Instructions:
In a food processor, combine boneless chicken chunks, roughly chopped coriander ,1 teaspoon lemon juice, ginger-garlic green chilli paste, black pepper powder ,chaat masala powder ,2 broken slice of bread, 1 egg, and salt.
Pulse the ingredients until they form a smooth paste-like consistency. You may need to scrape down the sides of the food processor bowl a few times to ensure everything is well mixed.
Marinate the mixture for 30 minutes.
Flatten the seekh kebab mixture slightly and place a small amount of grated cheese in the center.
Cover the cheese with a little more chicken mixture and shape it into a seekh kebab again, ensuring the cheese is enclosed within the chicken mixture.
Heat 2 tablespoons of oil in a non-stick skillet or frying pan over medium heat.
Once the oil is hot, place the cheese-stuffed seekh kebabs in the skillet, leaving some space between them.
Cook the kebabs for about 3-4 minutes on each side or until they are golden brown and cooked through.
Remove the cooked seekh kebabs from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
Serve hot with mint chutney or your favorite dipping sauce.
Chicken seekh kebabs are a popular South Asian dish, traditionally made with minced meat spiced and formed onto skewers for grilling. But like many beloved recipes, the seekh kebab has gotten a delicious makeover – introducing the Chicken Cheese Seekh Kebab!
This variation adds a delightful element – pockets of melty cheese nestled within the seasoned chicken. It's a perfect party appetizer, main course, or even a fun weeknight dinner.
The Allure of Cheese
The beauty of incorporating cheese into seekh kebabs is the textural and taste contrast it brings. Each bite bursts with juicy, flavorful chicken and then surprises you with a gooey, creamy center. You can choose from various cheeses, depending on your preference. Mozzarella brings a subtle milky taste, while cheddar offers a sharper bite. Experiment and find your perfect cheese pairing!
Spicing Things Up
The key to great chicken cheese seekh kebabs lies in the marination. A blend of warm spices like coriander, cumin, garam masala, and chili powder infuses the chicken with deep flavor. Ginger and garlic add a pungent kick, while fresh coriander leaves bring a touch of freshness. Don't forget the salt – it enhances all the other flavors.
Cooking Up a Feast
Chicken cheese seekh kebabs can be cooked in various ways. Grilling them over charcoal imparts a smoky depth, while pan-frying offers a simpler option. You can even bake them in the oven for a hands-off approach. No matter the method, be sure to cook them thoroughly so the chicken is cooked through and the cheese is melted and bubbly.
Tips for the Perfect Kebab
- Mincing the chicken finely ensures an even texture throughout the kebab.
- Chilling the marinated mixture for at least 30 minutes helps the flavors meld and allows the kebabs to hold their shape better.
- When shaping the kebabs, ensure they are evenly thick to cook uniformly.
- Basting the kebabs with oil or ghee while cooking keeps them moist and prevents them from drying out.
Beyond the Kebab
Chicken cheese seekh kebabs are delicious on their own, but you can elevate them further with chutneys and dips. A classic mint chutney provides a cool contrast to the richness of the cheese, while a spicy chili chutney adds a fiery kick. You can also serve them with chopped onions, lemons, and naan bread for a complete and satisfying meal.
So next time you're looking for a crowd-pleasing dish with a twist, try making chicken cheese seekh kebabs. With their burst of flavours and textures, they're sure to become a new favourite!
