Tandoori Chicken
Ingredients:
- For the Chicken:
- 500 grams Chicken pieces (legs, thighs, or breasts, bone-in or boneless)
- 1 tablespoon vinegar
- Salt to taste
- For the Marinade:
- 1 cup curd
- 1 tablespoons ginger-garlic paste
- 1 tablespoons cumin coriander powder
- 1 tablespoon Kashmiri chili powder (or regular chili powder)
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon kasuri methi (dried fenugreek leaves)
- Salt to taste
- Oil for cooking
- For Smoking (Optional):
- 1 tsp Ghee
- A small piece of charcoal
Instructions:
Wash and pat dry the chicken pieces. In a bowl, toss them with vinegar and salt. Let them sit for 15 minutes.
In a separate bowl, whisk together hung curd, ginger-garlic paste, coriander powder, chili powder, garam masala, turmeric powder, cumin powder, kasuri methi, and salt. Make sure the marinade is thick and coats the chicken well.
Add the chicken pieces to the marinade and coat them thoroughly. Cover the bowl and refrigerate for at least 6 hours, or ideally overnight, for deeper flavours. Give coal smoke to the marinade.
Heat oil in a griddle or pan over medium heat. Once hot, carefully place the chicken pieces in the pan. Cook for 5-7 minutes per side, or until golden brown and cooked through.
For the charred look and flavour, grill the chicken on open flame until it develops colour.
Garnish your Tandoori Chicken with your favorite dipping sauce, like mint chutney / onions / lemon.
