Kandha Poha
Ingredients:
- 1.5 cups thick or medium-thick poha
- 1 medium onion, finely chopped
- 1-2 green chilies chopped (adjust based on spice preference)
- 1/2 teaspoon turmeric powder
- Mustard seeds (a pinch)
- Curry leaves (a few)
- 2 tablespoons cooking oil (vegetable or peanut oil)
- Salt to taste
- Sugar to taste (optional)
- Roasted Peanuts.
- Fresh coriander leaves, chopped, for garnish
Instructions:
- Rinse the poha under running water for 2-3 times. Be gentle to avoid breaking the flakes. The poha should be moist but not mushy.
- In a pan, heat oil over medium-low heat. Add mustard seeds and let them splutter.
- Add curry leaves, green chilies, and roasted peanuts. Saute for a few seconds until fragrant.
- Add the chopped onions and cook until softened and translucent.
- Add turmeric powder and salt, and saute for another minute.
- Add the rinsed poha and mix gently with the onions and spices.
- Cover the pan and cook for 2-3 minutes on low heat, or until the poha is heated through.
- (Optional) If the poha seems dry, sprinkle 1-2 tablespoons of water and mix well. Cover and cook for another minute.
- Add sugar to taste (optional) and adjust salt if needed.
- Garnish with coriander leaves.
- Serve hot and enjoy!

- You can add other vegetables like peas, chopped capsicum, or grated carrots for extra flavor and texture.
