Kandha Poha


Ingredients:

  • 1.5 cups thick or medium-thick poha
  • 1 medium onion, finely chopped
  • 1-2 green chilies chopped (adjust based on spice preference)
  • 1/2 teaspoon turmeric powder
  • Mustard seeds (a pinch)
  • Curry leaves (a few)
  • 2 tablespoons cooking oil (vegetable or peanut oil)
  • Salt to taste
  • Sugar to taste (optional)
  • Roasted Peanuts.
  • Fresh coriander leaves, chopped, for garnish

Instructions:

  1. Rinse the poha under running water for 2-3 times. Be gentle to avoid breaking the flakes. The poha should be moist but not mushy.
  2. In a pan, heat oil over medium-low heat. Add mustard seeds and let them splutter.
  3. Add curry leaves, green chilies, and roasted peanuts. Saute for a few seconds until fragrant.
  4. Add the chopped onions and cook until softened and translucent.
  5. Add turmeric powder and salt, and saute for another minute.
  6. Add the rinsed poha and mix gently with the onions and spices.
  7. Cover the pan and cook for 2-3 minutes on low heat, or until the poha is heated through.
  8. (Optional) If the poha seems dry, sprinkle 1-2 tablespoons of water and mix well. Cover and cook for another minute.
  9. Add sugar to taste (optional) and adjust salt if needed.
  10. Garnish with coriander leaves.
  11. Serve hot and enjoy!


Tips:

  • You can add other vegetables like peas, chopped capsicum, or grated carrots for extra flavor and texture.
  • For a richer taste, add a squeeze of lemon juice before serving.
