Fish fry
Ingredients:
- white fish fillets (seer, pomfret, or any firm white fish) cut into bite-sized pieces (around 1 inch thick)
- Handful of curry leaves
- 1 tbsp ginger-garlic green chilli paste paste
- 1 tsp red chili powder (adjust to your spice preference)
- 1/2 tsp turmeric powder
- 1 tsp coriander cumin powder
- 1/2 tsp garam masala powder
- Salt to taste
- 2-3 tbsp vegetable oil for frying
- Lemon wedges for serving
Instructions:
- Marinate the fish: In a bowl, combine the , ginger-garlic green chilli paste paste, red chili powder, turmeric powder, coriander cumin powder, garam masala powder and salt. Add the fish pieces and toss well to coat them evenly in the marinade. Let it marinate for at least 30 minutes, or up to 2 hours for deeper flavour.
- Pour enough oil into a frying pan or wok to shallow fry the fish. Heat the oil over medium heat until it reaches around 350°F (175°C). You can test the oil temperature by dropping a small piece of the marinade; if it sizzles and floats to the surface, the oil is hot enough.
- Carefully add the marinated fish pieces to the hot oil, avoiding overcrowding the pan. Fry for 2-3 minutes per side, or until golden brown and cooked through. The fish should flake easily with a fork.
- Remove the fried fish pieces from the oil using a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil.
- Serve your delicious Indian fish fry hot with lemon wedges and your favorite accompaniments like chopped onions, mint chutney, or coconut chutney. You can also pair it with rice or roti for a complete meal.
Tips:
- Marinating for a longer time allows the flavors to penetrate deeper into the fish.
- You can adjust the amount of red chili powder according to your spice preference.
- For a tangier twist, add a squeeze of lemon juice to the marinade.
