Mutton YAKHNI Pulao
Ingredients:
- 500 grams mutton, cut into chunks
- 3 tablespoon ginger-garlic green chilli paste
- 1 teaspoon cumin seeds
- Handful of curry leaves
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala powder
- 1 tbsp Coriander Cumin Powder
- 1 cinnamon
- 2 cloves
- 2 star anise
- 6-7 black pepper (whole)
- Salt to taste
- 2 potatoes (cubed)
- 2 cups rice
- 1 sliced onions
- Coriander leaves for garnish
- Birista with its ghee for garnish
Method
In a cooker, heat 1 cup oil. Then add cumin seeds, curry leaves, whole black pepper, cinnamon, star-anise and cloves. Fry for some time. Then add onions and fry until golden brown. Then add mutton, ginger garlic green chilli paste,turmeric and salt and mix well. Pour in enough water to cover the mutton. Bring to a boil, then reduce heat to low and simmer until the mutton is tender and the gravy is thickened.
Once the mutton gets tender ,add coriander cumin powder, garam masala powder, potatoes. Mix and Cook well until the gravy releases its oil.
Then add 1 litre water, bring it to boil. While the water is boiling, wash the rice properly leaving no impurities. Then add rice to the boiling water. Add Salt according to taste.
Cover the cooker and simmer for 10-15 minutes, or until the rice is fully cooked and coated in the yakhni masala and the flavors have melded.
Garnish with birista with its ghee and coriander leaves and serve hot!
